I've been looking for low-salt and no-salt cheeses (actual block cheese, not things like cream cheese) as a holiday gift. It turns out that there isn't much available. I did find a few ...

Regular and cumin cheese made with potassium salt.

This page recommends brick, provolone (Sargento or Boar's Head), and Swiss.

Salt is used to help draw the moisture out when compressing the curds. Cheese made without salt is going to be more expensive because it takes longer to get the whey out.

(I make cheese when a friend's cow is giving more milk than either him or the calf can deal with.)
