Here are some terms on egg cartons that refer to how the hens are kept. When I can, I buy eggs from farmers, usually from chickens with pasture access. At a regular grocery store, I shop around until I find a brand that I really like and then stick with that. I'm very happy with the Omega-3 eggs the local store carries; they are tasty and cook up beautifully. Not quite as good as eggs fresh from a real farm, but far better than most supermarket eggs.

SO, if you've gotten out of the habit of having eggs, try reintroducing them where they do the most good-- in breads, to soften the crumb and help browning, and in delicate sauces, or in traditional family recipes (like matzoh ball soup, blast it! The egg yolk REALLY makes a difference in the flavor and texture!)

Date: 2014-12-24 07:27 pm (UTC)Avoiding foods is primarily a concern for people with allergies or major medical problems. Sure there are things I can't eat, but I got that information from my body, not from a study of other people.
Chemicals, now, those studies I pay attention to; but it's so hard to find safe food these days, it's hardly worth the bother. I try to shop for minimally contaminated things most of the time. It's a lot like picking through garbage to find things that might be edible.

Date: 2015-01-02 08:32 pm (UTC)My parents have bought chickens now they've retired, so the majority of my eggs come from them, when my visits to my parents/their visits to me allow. They're lovely, and I know exactly how much freedom they get - and what they eat.
Of course, it does mean the odd times I have to buy my eggs from the supermarket, they're never quite the same. (I always buy free-range though, and have for years.)
