My rose hips are starting to ripen. I went out looking for recipes, and found this site. I may try the rose hip pie recipe, possibly with some other fruit like apple or raspberry thrown in too.

Wild fruits are super easy to grow. Often you can find them for free, growing in the wild, or get them from people who grow the plants for ornamental purposes and aren't interested in the fruit.
