Do you have limited interest in salads? Some bean or pea sprouts are quite thick, for use in stir-fries or other cooked recipes. Also you can use just-sprouted peas or beans in various dishes, before they get tall. Mung beans are the most popular, but there are many other options.

Oh hey this one has a hippie recipe for anything pesto! :D You can tell from the nutritional yeast instead of cheese. Gosh I haven't had that in decades.

You can also blanche some vegetables to prevent chlorophyll:
