We are making Onion Masala from The Indian Instant Pot Cookbook. This fills the "garam masala" square in my 6-1-22 card for the Food Fest Bingo. For similar recipes:

How to Store and Use Indian Onion Masala in Recipes

If you like onion things on your hot dogs, Onion Masala makes a good condiment. if you like quick-fix soups, noodles, flavored rice, meatloaf, etc. then it also makes a great savory paste for those.

Note that we didn't use peppers in our batch, which were called for in the separate recipe for Onion Masala but not in the Punjabi Rajma.  You can make it milder or hotter based on whether, what kind, or how many peppers you use.


EDIT 6/14/22 -- We finished making the Onion Masala. It turned out quite well, with a spicy aroma that held only a hint of onion. It made about 4 cups. If we want to use this as a base to keep on hand, we'd want a larger amount.

We used half of it to make Punjabi Rajma dal from the same cookbook. This fills the "Indian Instant Pot Cookbook" square in my 6-1-22 card for the Food Fest Bingo. Some similar recipes:

Thinking about this, we would like to try:

* adding the Onion Masala to Madras Lentils

* using canned beans instead of pressure-cooked beans

* making a meatloaf with Onion Masala.
