There's going to be a growth in food trucks in the Uk at least. With the number of restaurants and other 'foodie' business going under, there's a lot of cooks etc being laid off. A food truck is a relatively cheap way starting a catering business, and because it's outside, it gets around a whole raft of COVID related restrictions.
Online can work, and many people do that. It gives you a wider range of potential customers. But you have to account for shipping and whether that will drive the price beyond what customers are willing or able to pay.
Also, it does nothing to build the local community or economy. If there's a cluster of small local businesses, then that attracts people to their location and encourages them to interact. Add a parklet with shade and seating, they've got even more reason to hang around there. A strip mall of chain stores actually funnels money out of the community. If you do your business online, you're kind of like a chain store: you have a local foothold, but much of your economic activity happens somewhere else.
