On my list of Things to Do with Entirely Too Much Money is a collection of apple trees. One apple tree of every type I could get my hands on. I'd need two locations, though -- applies divide into northern and southern varieties -- and I'm dubious that Illinois would currently be ideal for either given its shifting zones.

(I knew someone who had One apple tree with 30 kinds of apple growing on it.)
They teach you how to graft, (if you don't already know,) and usually sell root stock *Cheap*
