Recipe: "Turkey and Swiss Meatloaf"

I made this tonight.
"Turkey and Swiss Meatloaf"
Ingredients:
1 egg
1/2 cup cornflake crumbs
1/4 cup hemp hearts
1/4 cup parsley flakes
1 teaspooon rubbed sage
1/2 teaspoon white peppercorns, ground
1/4 teaspon sea salt
1 teaspoon Worcestershire sauce
1/2 onion, diced
1 pound ground turkey
1/2 cup shredded Swiss cheese
Directions:
Preheat the oven to 350ºF. Spray a loaf pan with cooking spray.
Crack an egg into a wide bowl and scramble it. Add 1/2 cup cornflake crumbs, 1/4 cup hemp hearts, 1/4 cup parsley flakes, 1 teaspooon rubbed sage, 1/4 teaspon sea salt, and 1 teaspoon Worcestershire sauce.
Grind 1/2 teaspoon white peppercorns in a mortar and pestle. Add the ground pepper to the bowl.
Add 1 pound ground turkey. Mash everything together until thoroughly combined. It should stick together well. Form into a log shape and transfer to the loaf pan.
Cook at 350ºF for 50-55 minutes. The top should be browned and the juices should run clear, with no pink inside the loaf.
Remove the meatloaf from the oven. Cover the top with shredded Swiss cheese. Return to the oven for 5 minutes or until the cheese is melted.
Take the meatloaf out and set it to cool. Wait 5 minutes before slicing.
Notes:
Hemp hearts add protein, fiber, and nutrients.
Parsley flakes absorb liquid and give a leafy flavor.
This turned out decent, though not quite as good as I hoped. It's a bit on the grainy side. Crackers rather then cornflake crumbs might help.
