People need an excuse to use up the yolks? That's... that's sad.
If anything, I usually feel like I have less excuses to use the whites. Sure, a lot of it involves whipped items, but yolks are that jewel of flavor and textures.
I don't think it's about not appreciating an ingredient, as having to think up what to do with a part that's left over after making something deliberate.
