Some people do, others don't; same with the sabbats, whether they follow the local version or the version attached to the tradition's origin. It depends on whether they want to synchronize with the local environment or maintain a reality bubble from somewhere else.
Another consideration is that the elements were generally based on conditions where the tradition originated. That may not apply elsewhere. If you're standing on a beach, and you call Water in any other direction than it actually is, then you are likely to get very wet. "Hey asshole, I'm over HERE!" :P
