Poem: "The Taste of the Sea"

"The Taste of the Sea"
Something in an oyster
holds the taste of the sea.
A raw oyster is cold and
wet and briny, its flavor drawn
from the white foam of the waves.
A smoked oyster is succulent,
sultry, its essence the memory
of campfires on the beach at dusk
when the clouds turn blue and purple
and the sky fills with orange sparks.
These two things are equally true,
the flavor of oysters in different forms
as changeable as the moods of the sea.
To eat an oyster is to eat the sea itself.
