Kosher only filters for ingredients, not for processing equipment. This is sufficient for most people with a philosophical objection to dairy products, but not for many people with a dietary limitation. Vegan is more restrictive, thus more helpful for people with special dietary needs. For maximum safety you need to pay extra for "certified dairy-free" foods.
