I’m not sure (my ability to process time-related concepts sucks), but I think this should say “Monday morning.”
This is how I understood it: 1) The first day you described was Saturday: “Saturday focused on trustbuilding.” 2) The second day you described wasn't named, but had to be Sunday because it followed Saturday: “The next morning was devoted to leadership.” 3) Therefore, the third/last day you described should be Monday (which fits with the idea of the program being over the Saturday-Sunday-Monday Presidents’ Day weekend.)
So “On Sunday morning, they studied disaster preparedness and emergency response.” should instead say “On Monday morning, they studied disaster preparedness and emergency response.”
