I use cooking pears. You can't find these anymore, we have a tree. Next-best option, dessert pears will work if you buy them before they're fully ripe, when they're still crunchy. Cut them up and cook them until half done -- they should be tender but not soft. Freeze in cartons.
To make pie or cobbler, thaw out the pears. They will finish cooking in the oven when you put the pie in to bake the crust.
