Awesome. :D There are probably cookies on the EMT table decorated with red cross-crescent-crystal designs. You can pipe anything. These are done with royal icing. The symbols are even simple enough to do cutouts. With a red cross cookie-cutter, just make red dough and white dough, then swap the red crosses into the center of the white cookies. There's a firefighter one too.
