I made sloppy joe filling today. We got 11 cartons full, from a double batch using 6 pounds of ground beef. So that's 11 suppers for the two of us plus somewhere between 11-22 lunches for Doug. \o/ I also realized that I never got around to posting this recipe, so here it is.


"Crockpot Sloppy Joe Filling"

Ingredients:
1 pound beefsteak tomatoes
1 bell pepper
1 onion
1 cup chopped celery
2 cloves garlic, minced
1 cup ketchup
1 cup barbecue sauce
6 oz. tomato paste
2 tablespoons Worcestershire sauce
2 tablespoons olive oil
3 pounds ground beef
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon pink salt
1/4 teaspoon rubbed sage
1/4 teaspooon allspice
1/4 cup red wine vinegar
1/4 cup brown sugar

Directions:

Chop 1 pound beefsteak tomatoes. Put them in the crockpot, cover, and turn it on Low.

Chop 1 bell pepper and 1 onion. Add them to the crockpot. Chop celery until you have 1 cup, then add it. Mince 2 cloves of garlic and add that.

Add 1 cup ketchup, 1 cup barbecue sauce, 6 oz. tomato paste, and 2 tablespoons Worcestershire sauce.

Put 2 tablespoons of olive oil in an electric skillet. Brown the ground beef.

Grind together 1 teaspoon dried oregano, 1/2 teaspoon ground black pepper, 1/2 teaspoon pink salt, 1/4 teaspoon rubbed sage, and 1/4 teaspooon allspice.

Cook for several hours until vegetables are translucent and soft.

Add 1/4 cup red wine vinegar and 1/4 cup brown sugar. Adjust the sweet/sour balance and texture as necessary.

Makes about 10 servings. Filling may be divided into containers and frozen.
