As a matter of fact, the Lacuna contains lab animals including rabbits, guinea pigs, rats, and mice. The first two have been used by humans as meat animals in the past and can easily be converted to that purpose now; they are highly efficient at turning vegetable scraps into meat. Rats might work, and they can thrive on outright garbage.
Chickens used to be penned with an outhouse at one corner. Pretty sure spacers would not go for that, but it works. The Gardener is going to have a hard enough time teaching people about compost, let alone chicken toilets.
