Recipe: "Oatmeal Coconut Cookies"
Tonight I'm making Oatmeal Coconut Cookies.
We got a big can of quick oats, which had a stupid plastic top that failed to open properly. Prying it open with an oyster knife resulted in a can that doesn't have an airtight seal. So I transferred as much as would fit into the previous can, and went to look up recipes that use a lot of oats.
I've got the first batch in the oven now. :D
EDIT 2/2/23 -- The first batch is done, and the second batch is in the oven. These are quite tasty! :D
EDIT 2/5/24 -- Remember the lemon curd from my first attempt at Buddha Bars? Putting that on top of Oatmeal Coconut Cookies is delicious.

Well, this recipe uses 2 1/4 cups of it and makes a ton of cookies. :D I love oatmeal too. It's so versatile.

Only problem with oatmeal coconut cookies is that they don't have chocolate chips. And that they do have coconut. And oatmeal. Okay, that's 3 problems. If one overlooks those, sounds delish.
