I made Apple Cider Caramel Sauce.  This has been a favorite since the very first batch.  It's a very easy way to make caramel sauce, and you can start with a wide range of sweet liquid as a base.

Now I'm imagining sarsaparilla caramel. Or a high-quality root beer!

They should work. Probably you could turn birch beer into something similar to birch syrup, at a much lower cost.
