The thing is, she was already IN the hospital when everything went wrong, and the doctors couldn't save her. Heavy bleeding from childbirth gone wrong is really hard to fix, especially fast enough. A healer might have been able to save her, if she wasn't too exhausted, but ordinary doctors probably not.
Another aspect is that it's like wishing you were tall enough to reach an escape hatch. Some superpowers just take time to grow in. Cas was 16 when it happened. That was enough for the incident to make an impression and probably influence what he'll develop now. But it was too early to come out all at once, for him, the way his life has gone, the choices he's made. If he had changed all of that, he probably wouldn't have met Evie or had Hali in the first place -- and those aren't things he'd want.
Moving further, Cas loves the life he has now. He wouldn't have it if it weren't for all the other things going wrong earlier. And he wouldn't trade it for anything. Realizing that will probably leave him crying on the couch for a few hours.
This is stuff that Aidan can walk him through, if Cas thinks of it and wants help. When you're that ancient, you learn a lot about what-ifs because you see the same patterns repeat enough to make the various options more predictable.
