Pumpkin / Squash Recipes
It is autumn and I saw all these cool international pumpkins at the store. Haven't bought any yet but I'd like to, because I know Africa has many awesome recipes for pumpkin and other squash. I looked up some recipes online ...
This one uses a pie pumpkin and red kidney beans:

stew/
Black beans, corn, and pumpkin! :D I'd probably leave out the jalapenos.

With beef stew meat, calls for both pumpkin and acorn squash, but could
probably do it all with pumpkin:

With mutton and potatoes, one onion is probably plenty:

With chicken, and I see no reason not to use thigh meat instead of breast.
This is one of my favorite recipes that I've found.

With pork shoulder, sounds somewhat complicated.

Yam, pumpkin, chicken, and dried shrimp:

Whole stuffed pumpkin with ground lamb, long cooking time but sounds quite
tasty: https://www.boston-discovery-guide.com/stuffed-pumpkin.html
