... But how is it in terms of theobromine?

(I love medicinal-level dark chocolate; I favor between 80%-85% cacao solids, and I have since I was about 7 or 8 years old).

Alternating bands of dark, bittersweet, chocolate and this ruby chocolate would likely send me to my happy place.

It was the mention of berry-flavored overtones that made my brain go to that point.

Chocolate/Raspberry
Chocolate/orange
and Chocolate/Cherry

Are among my favorite flavor combos.

Chocolate/Peanut Butter -or /Caramel doesn't impress me, much.

(though, once, long ago, I had a coffee ice cream with distinct fudge and caramel swirls, which was pretty yummy).

Weird (but happy-capriuni-making) flavor combinations that I've discovered:

Cocoa (unsweetened), black pepper, lavender blossom, non-fat milk powder

Cocoa (unsweetened), curry powder.

So I think you're right about Ruby and heat

Also: It would make an absolutely gorgeous ganache for a dark chocolate or vanilla cake.

On the one hand, this sounds delicious: I love chocolate with fruit-notes, so I would probably really like this. On the other hand, while it is super-pretty, I would probably have to work pretty hard at first to convince my brain that it's NOT colored white chocolate (which I strongly dislike). Overall, though, I am quite looking forward to this hitting the retail chocolate market!
